Jaboticaba is a little known gem of a fruit native to the states of Rio de Janeiro. Flavours of grape, plum, blueberries & lychee it has a sweet flesh with a sour skin. We used 30% by volume of locally grown & pressed fruit, fermented on the skins to add some tartness & tannins. The resulting beer has a deliciously juicy oatcream quality, with just enough earthy acidity to balance the sweetness.
